Homemade Almond Joys

First, I wanted to make macaroons because I didn’t really have enough ingredients for any other dessert (no flour, cocoa powder, nuts, etc.). A lot of recipes used egg whites only, but that was too complicated. What the hell am I supposed to do with the yolk? Also I don’t have a beater or whisk to make meringue anyway. I found a recipe on a website called JasonBItes which had a very simple recipe that used the whole egg. So I did that. I made the macaroons into logs, so that I could potentially make them into chocolate bars. Then I made them into chocolate bars. I melted the chocolate in the microwave and just dipped/rolled the coconut logs (after they cooled). I added some ghee to one batch of the chocolate. For one of the macaroons, I made an almond nugget out of almond butter to replace the almond in my fake almond joy. It was good. I should do that for more of them next time.

The macaroons were a little dry. Maybe I should bake them for less time. (Only 10 minutes).
